2 cups spelt or oat flour

3/4 cups rolled oats

1/2 cup chopped walnuts (optional)

1/2 teaspoon sea salt

3/4 teaspoon baking soda

1/8 teaspoon cinnamon

1/4 teaspoon cardamom

1 cup grain-sweetened or vegan chocolate chips

2/3 cup agave nectar

2/3 cup melted coconut oil

2 tablespoons almond milk or coconut milk

1 teaspoon vanilla extract

Directions (a):

Combine the oat flour, oats, walnuts, salt, baking soda, cinnamon, cardamom and chocolate chips in a bowl and whisk together to combine and breakup any lumps. In another medium-sized bowl, whisk together the agave nectar, coconut oil, milk and vanilla until well combined. Pour the wet ingredients into the dry ingredients and stir together with a wood spoon until well combined. Refrigerate for 10 minutes to firm the batter. Freeze cubes of batter to make Cookie Dough Yonanas.

(b): Place the batter by the spoonful on a baking sheet lined with parchment paper. Bake for 10 to 12 minutes or until golden brown. Remove and cool on a wire rack. Use cookies to make Cinnamon Yonanas Cookie Sandwich.
